Chips with salt and sauce

Today we travelled from London to Edinburgh, Scotland! The four hour train ride passed quickly with many beautiful views along the way. And just to be clear, as a former local once told me, to not sound American you must pronounce it Ed-in-bruh.

Immediately the city of Edinburgh left me with an impressive impression. We stepped right into the old town, which has had settlements since the Celtic times! The architecture here is all so old and so beautiful, it feels much older and much more steeped with history than any place we saw in London.

After checking into our hostel (where we have a beautiful view), we meandered down the Royal Mile. This street, which stretches high up from Edinburgh Castle down to Holyrood Palace is lined with many cute shops and restaurants housed in ancient buildings.

And to finish off the evening we got what we were told is an Edinburgh classic, chips with salt and sauce. We went to Bertie’s Proper Fish & Chip on Victoria Street, ordered some twice fried chips, and topped them off with the famous Edinburgh sauce (which tasted like a mix of vinegar, gravy, and something sweet).

Just one last fun fact, Victoria Street, built in the early 1800s, is said to be JK Rowling’s inspiration for Harry Potter’s Diagon Alley!

 Day two in London was a blast! We spent the day in central London  walking around Westminster, Mayfair, and Covent Gardens. We started by checking out the London Eye and Big Ben, some classics. Airplane food

Hello all :) Spending the next four months away from home I thought I would try to keep a blog, to share experiences with loved ones and to drop my travel thoughts! But we’ll see how well this blog actually keeps up in the grand scheme of things and in the businesses of travel. We started our journey in Victoria, ferried over to Vancouver, and caught our flight out of YVR to London! Packed in just (large) backpacks I feel like a true adventurer; one backpack on the back, one on the front, and a Canadian flag pinned to everything. So what’s the idea for this blog? Well I’m thinking a little travel, a little culture, and of course, a LOT of food!  But perhaps not airplane food… although I usually end up liking it a lot more than I expected to!

Ginger and White’s Turkish Eggs

 Day one in London was spent wandering around Hampstead Heath, The Regent’s Park, and everywhere in between! We started our day at 12pm (after catching up on 14 hours of sleep) by walking to Hampstead Heath. This park was so green and so big! I was shocked at the sheer size of the park. It was a beautiful sunny day and tons of people were out to enjoy the weekend.  Parliament Hill Viewpoint We came across the Hill Garden and Pergola, a really beautiful structure in Hampstead Heath. With its cool architecture and blooming flowers, it felt like we were on the set of Bridgerton. By this time we’d gotten quite hungry so we made our way to Ginger & White  for lunch. Let me say it was delicious! For drinks I had an iced beetroot oat latte which was nice and refreshing, and very flavourful.
